Michael Braun heads to 185 Bar & Restaurant

Last Monday night I headed to 185 Bar & Restaurant at the Chifley Hotel located in the Perth CBD for a nice dinner with my Sister Jane who is over from Melbourne and Bree. Being a Monday night the restaurant wasn’t buzzing with people, but I’ve heard that weekends are always busy.

We started with a tasting plate that consisted of quail, scallops, a blue cheese tart and pork wrapped in prosciutto. I also ordered the duck spring rolls. We shared all of this, it was all cooked to perfection and really tasty.

Bistro Felix - All class

For entree I chose the Risotto of chicken liver, foie gras with peas and bacon, sherry reduction which was amazing. Perfect contrast in textures and the flavours intermingled in any combination you forked them up. It is a pity that there are a number of people uninterested in sampling things such as foie gras, because they are definitely missing out on something special with this one.

I also stole part of a guests Pemberton Marron, Kipfler Potato with Bisque Mayonnaise, Sauce Gribiche which was presented beautifully, cooked to perfection and melded well with all the ingredients, hard to go passed!

Loose Produce Cooking School

Weatherwise, last Wednesday certainly wasn’t a night for an outdoor barbecue, but it was perfect for being part of an indoor cooking class at the Loose Produce in Como. With some trepidation a friend and I went along to Class Two of The Flavours of Tuscany where the cuisine specific to the city of Lucca and the region of Garfagnana was being explored. Not being the best cooks in the world we were wondering what we had let ourselves in for.

Lamont's in East Perth

We started with a Chive and Creme Fraiche Tart with Roquette and Pecorino Salad matched to a 2007 Lamont's Verdelho. One of the lightest yet creamiest tarts you'll see and taste, which was a perfect start. Described in one word by my guest as "amazing".

2nd course was a Scallop Boudin Blanc with Apple Jelly and Watercress Puree. This was matched with the standout wine for the night in the 2002 Lamonts Riesling and in case we were still thirsty, the 2006 Lamonts Riesling. A perfect example of the teachings that Kate wishes to get across to us budding wine enthusiasts by matching Rieslings of different vintages.

The scallops came out perfectly, as expected (too many restaurants overcook their seafood, and scallops in particular) and the apple jelly was so subtle and somehow matched brilliantly to the watercress without taking anything away from the star, the scallops.

Firehouse Bar & Restaurant

Latest restaurant onto the EatingWA website, the Firehouse Bar & Restaurant has launched their own new and spiffy website.

Enjoy a menu of tasty in-season favourites, including prawns, barramundi and melt-in-your-mouth kangaroo steaks with a crispy fresh salad, all sourced from the best local produce and prepared under the supervision of executive chef Damien Rogan.

The best feature of The Firehouse is its great outdoor courtyard space, warm enough for a weekend afternoon in the winter with mates, or a day by the pool with the kids in the summer.

Veritas in Highgate - by TheCookingProfessor

The octopus was very tender and quite sweet. It blended well with the baby rocket dressed in a very light mayonnaise. The saffron was just sufficient to give the mayonnaise a lift above the ordinary, but not too dominating to overwhelm the octopus. Thin batons of grilled chorizo added a bite to the dish and was a surprisingly good accompaniment to the chunks of octopus.

My partner had lemon infused beef polpetta, about six small balls, in a spicy tomato sauce. Simplicity was the key, but the taste was exceptional and the freshness of flavour indicated that the balls had been cooked to order.

For the mains, I ordered red emperor fillet and my partner also choose seafood, in her case a Caccioccu. The emperor fillet was beautifully cooked and served on thin slices of kiffler potatoes baked in a star anise flavoured oil, with a few steamed baby carrots strewn about the plate. A very interesting garnish of mild, finely diced green chilli and lime zest completed the dish. It was superb in its melding of flavours, with nothing dominating the excellent WA fish fillet.
