My wife and I opted for the 5 courses, with wines.
The sesame "welcome dish", was an interesting introduction, a fluff of flavour
The first plate, was a series of flavours designed to be eaten in the presented order, on a base of winter tubers, which we thought showed great creativity, and beautiful presentation.
Next was prawn and pig tails with a nice variation on apple sauce, apple sorbet.
The fish with "dripping" was the most succulent fish I've ever eaten, our waiter explained the "sous vide" method used to cook the fillet kept all the juices in, resulting in the delicate texture.
My wife chose the spatchcock and I the Bolito Misto 2009, a range of slow cooked meats, both excellent.
We both had the Chocolate Veloute, a divine finish.
Attentive and friendly, our waiter described each course and the wine confidently. Bread and water were always replenished.
A very clean feeling to the room, allowing focus on the food, just a shame there weren't more diners in there to appreciate the magnificent food

We were told the menu changes each month, so we are both keen to discover what other interesting ideas the chef will produce next. Presentation of food, and the mix of ingredients were the best we have experienced in Perth. We'll be back soon, with our friends...If you are after impressive food, this is the place.
